Summary
Guy Martin, chef au Grand Véfour, revient, au fil de quarante recettes, sur son parcours atypique, qui a fait de lui l'un des plus grands maîtres queux français. Il rapporte ce qui lui a permis de construire son identité culinaire il livre ainsi les recettes de son enfance, mais aussi celles, légendaires, du Grand Véfour, qui ont fait sa renommée. Issu d'une famille d'épicuriens qui lui transmet les plaisirs de la table et le goût des produits régionaux, Guy Martin est un véritable autodidacte: il débute comme simple pizzaïolo, puis décide de se lancer et apprend seul la cuisine en expérimentant bon nombre de recettes d'un livre qui en compte 5 000 ! Ce passionné ne tarde pas à se faire remarquer : il devient, en 1985, l'un des plus jeunes chefs étoilés et, entre, dès 1991, au Grand Véfour, le restaurant historique de Raymond Oliver. Le récit de cette aventure parisienne est pour Guy Martin l'occasion de dévoiler toute la mécanique d'un restaurant trois-étoiles : quel est le rôle du chef de cuisine ?
