Pellegrino Artusi a 71 ans lorqu'il met un point final à la première édition de l'œuvre de sa vie, la scienza in cucina e l'arte di mangiar bene, qu'il publie à compte d'auteur et ne cesse d'enrichir pendant 20 ans. Ce commerçant aisé né en 1820, passionné de littérature et de gastronomie, compile un grand nombre de recettes - 790 pour la dernière édition - variées et accessibles qu'il a découvertes au gré de ses voyages, mais aussi de ses échanges épistolaires avec ses fidèles correspondants. Un livre collectif par et pour les italiens. Dans un style plein d'esprit, l'auteur propose une plongée passionnante dans l'histoire de son pays mais aussi un objet littéraire étonnant, source d'inspiration et de référence pour les professionnels, comme Auguste Escoffier, et pour les amateurs. Un cadeau que l'on offre aux jeunes mariés et que les italiens appellent affectueusement... L'Artusi !.
