Summary
Le vin, en tant que produit fermenté, a des vertus détoxifiantes insoupçonnées quand il n'est pas traité. Mais la viticulture conventionnelle est parmi les plus gros consommateurs de pesticides au monde. Ces substances nous intoxiquent durablement et, par leur proximité chimique avec les arômes naturels, déforment le goût des vins. C'est ce que nous montrent les auteurs de ce livre, où l'on découvre aussi qu'il est possible d'apprendre à reconnaître le goût des pesticides, pour pouvoir ensuite éviter les produits qui en contiennent.. En effet, ils ont proposé à des cuisiniers et à des vignerons une expérience inhabituelle : goûter des pesticides dilués dans de l'eau aux doses où ils ont été identifiés dans des vins. Une palette de nouveaux goûts et de sensations s'ébauche dans le cerveau, qui permet peu à peu de déceler la présence de pesticides. Un « Petit guide » détaille les caractéristiques, au nez et à la bouche, de onze pesticides parmi les plus répandus dans les vins.. Ce livre n'est pas un guide oenologique. Il se conçoit plutôt comme un outil original, de science pour tous, plaidant pour une recherche du bien-vivre et du bien-manger qui passe par l'éradication des substances chimiques nocives..
